All you need is the following:
Crust
- 1 ½ cups of organic almonds
- ¼ cup coconut oil
- ½ tsp sea salt
- 1 ½ cups oatmeal
- 5 organic pitted Kartago Deglet Noor Dates
- 5 pitted prunes
Filling
- 1 ½ cups of water
- 1 tbsp vanilla extract
- 10 organic pitted Kartago Deglet Noor Dates
- 10 pitted prunes
Directions
To begin making the crust, firstly, place your almonds, oats, and sea salt in a food processor or a blender and bring them to a fine crumble. Next, cut your Kartago dates and prunes into small pieces, place them in the processor, and mix them for about 10 seconds. After you’ve blended all the ingredients properly, melt your coconut oil and pour it into the processor until the mixture becomes doughy. Place ¾ of the dough on a square baking dish (preferably 8 inches) lined with parchment paper and press it.
After your crust is done, you need to make a date and prune filling. Start by mixing your prunes, dates, and vanilla extract together in a processor until you have a smooth paste. For some additional texture, you can add water if needed. Place the mixture on top of the crust with a spatula, and place the remaining ¼ of the dough on top of the filling.
There are two ways you can have your snacks – chilled or baked. If you go for the former option, simply place the snacks in the fridge and let them stay overnight. Alternatively, preheat your oven to 350 F and let the snacks bake for 20 minutes.
